Buttermilk pancakes

Ok, it's time to put away the Aunt Jemima and Bisquick. These pancakes are sooo easy and taste sooo good you won't need the dry bland powder any more!

1 cup of cold well shaken buttermilk
1 egg
1 Tbsp vegetable oil
1 cup all purpose flour
1 tsp baking powder
1 Tbsp sugar

Mix the first three ingredients in a medium size bowl. Mix the 3 dry ingredients together then add to the wet ingredients stir until just combined, do not over mix or your pancakes will be tough and chewy.

(for a shot of flavour I add a good Tbsp of maple syrup to my batter at this point)

Pour batter into well greased pans and cook on medium heat.
Makes 4 good sized pancakes
