Wanted an easy sauce for pasta and chicken and came up with this version of a white wine sauce. It's incredibly easy and very tasty!
2 minced shallots
1 Tbsp fresh thyme
salt and white pepper
1/2 cup dry white wine
1 3/4 chicken stock
1 cup mushrooms (mixed)
1 Tbsp salted butter
Saute shallots in 1 Tbsp butter and 1 Tbsp olive oil; add fresh thyme, salt and white pepper and continue sauteing for 1 minute on med. heat.
Add white wine bring to a boil and reduce to 1/2.
Add chicken stock; bring to boil and simmer on med-low for 7-10 minutes.
Meanwhile in a separate pan saute mushrooms in 1 1/2 Tbsp butter and season with salt and white pepper.
Add the mushrooms to sauce just before serving.
Pour over grilled chicken and fresh pasta.
