This is such a great recipe, one pot to clean and fool proof! I usually serve it as a pie using homemade pie crust if I have the time and energy to make the crust or simply use a ready -made crust from the grocery store.
Serve it with a dollop of real whipped cream.
2/3 cup dark brown sugar
3 Tbsp cornstarch
Pinch salt
2 cups milk
1 egg, slightly beaten
1 tsp vanilla
2 Tbsp butter
½ cup whipping cream
In a medium saucepan, whisk brown sugar with cornstarch and salt until evenly mixed. Whisk in ½ cup milk until smooth. In large cup, whisk remaining milk with egg then whisk into the milk mixture in pan.
Set the pan over medium heat and stir constantly until it boils. Reduce heat to low and stir for additional 1 minute. Remove from heat and add vanilla then butter. Place in pie shell or little bowls. Refrigerate until firm 2-3 hours.
To make the whipped cream simply pour into a bowl and whip, once it starts to thicken sweeten with 2 Tbsp sugar and then continue to whip until thickened.
