I think I have tried just about every banana bread recipe out there and this is by far my favourite! It is so moist and tasty, the only problem...it’s not long before it’s gobbled up and time to make more!
1 ¾ cups flour
1 tsp baking powder
¼ tsp salt
½ cup salted butter
1 cup sugar
2 eggs
2 tsp vanilla
2-3 very ripe bananas, mashed
¾ cup vanilla yogurt
½ cup walnuts or chocolate chips (optional)
In bowl, whisk together flour, baking soda, baking powder and salt; set aside.
In a large bowl, beat butter and sugar until fluffy. Beat in eggs one at a time, beating well after each addition and stopping to scrape down the sides of the bowl. Beat in vanilla. Stir in mashed bananas and yogurt. Add flour mixture to banana mixture and stir to moisten. (Add nuts/chocolate chips and stir to combine)
Scrape into 9x5 inch loaf pan that has been greased. Bake in a 350 degree oven for 1 hour or until tester inserted in centre comes out clean. Let cool in pan on rack.
For muffins; grease 12 count muffin tin and bake in a 375 degree oven for 20 minutes or until tester inserted in center comes out clean.
