OK, I don’t usually use the microwave to do anything but pop my popcorn, defrost, reheat and melt my butter & chocolate, but this recipe came from a friend who prepared it for the sceptic in me and I absolutely loved it! It’s obviously quick and surprisingly tasty! One of my ‘go-to recipes” when I’m time crunched!
2 Tbsp butter
1 Tbsp soy sauce
1 Tbsp dried basil
4-6 boneless chicken breasts
½ cup of white wine
2 tsp corn starch
½ cup cream
½ cup seedless grapes (green, purple or both)
¼ toasted slivered almonds
1. Melt butter in microwave
2. Stir in soy sauce and dried basil
3. Put in chicken; coat pieces with sauce
4. Pour in wine
5. Cover and cook on high for 12-15 minutes
6. Combine corn starch and cream
7. Stir into sauce
8. Continue cooking on high 3-4 minutes without cover
9. Add sliced grapes and almonds
Serve over rice or fresh pasta.
