Hot Fudge Pudding

This is a recipe I found in a magazine years ago; I’ve been making it for my family and friends whenever I need a quick and easy dessert. It is especially good with vanilla ice cream!

1 cup flour
1 ½ cups sugar (divided)
2 tsp baking powder
½ cup unsweetened cocoa powder (divided)
½ cup vegetable oil
½ cup milk
1 tsp vanilla
1 ¾ cups hot water
½ cup nuts or semi sweet chocolate chips

In a 9 inch square pan stir together ¾ cup of the sugar, the flour, baking powder and ¼ cup of the cocoa powder. In a small bowl, mix together oil, milk and vanilla; then add to dry ingredients in pan, stirring with a fork until combined. In another small bowl, stir together the remaining ¾ cup of sugar, ¼ cup of cocoa powder and chips/nuts. Sprinkle this evenly over the batter.

Finally pour the hot water over the dish-DON’T STIR!

Place the pan on a cookie sheet and bake at 350 degrees (middle rack) for 40-45 minutes.
Remove and serve with a dollop of vanilla ice cream! YUMMY!
